Chocolate Butter Recipe

Chocolate Butter
Ingredients
1 stick unsalted butter
2 Tbsp unsweetened cocoa powder
2 Tbsp confectioner’s sugar
2 squares (.5 oz or so) of your favorite chocolate, chopped
pinch of sea salt
Method
Pile all the ingredients in a food processor and pulse until combined. That’s it.

Good chocolate and good butter. That is the only key. I used a Valrhona 85% bar for the chocolate. And if anyone has a great recommendation for butter, I’d love to hear. Ever since trying French butter I am very self conscious about our American versions. (UPDATE: Thank you Lindsay, for pointing me to this post about butter, I am now on a mission to hunt down Beurre D’Isigny or an Echire butter.)

Browned Butter Chocolate Chip Cookies

Browned butter and lots of vanilla give these chocolate chip cookies some extra special flavor.
 

Ingredients:
  • 1 cup unsalted butter, browned and slightly cooled*
  • 1 cup packed brown sugar
  • 1/3 cup granulated sugar
  • 1 large egg
  • 1 large egg yolk
  • 2 tablespoons light cream, evaporated milk, or milk
  • 2 teaspoons vanilla
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups semisweet chocolate chips

Preparation:

*To brown butter, , heat in a saucepan over medium heat until the butter begins to simmer. Continue cooking, stirring, just until butter begins to turn golden brown, about 4 to 5 minutes. Pour off into a measuring cup or bowl, leaving darkest sediment behind. Let the butter cool to room temperature. In a large mixing bowl with electric mixer, beat the browned butter and sugars until light and fluffy. Add egg and egg yolk, milk, and vanilla. Beat on low speed until well blended.
In a separate bowl, combine the flour, baking soda, and salt. Gradually add the dry ingredients to the egg and butter mixture, mixing on low speed, until a soft dough forms. Scrape the bowl a few times. Stir in the chocolate chips. Cover and chill for about an hour.
Heat the oven to 375°. Line a cookie sheet with parchment paper or a silicone mat; spray paper with cooking spray. Using a cookie scoop, drop balls of dough onto the silicone mat or greased parchment, allowing about 2 to 3 inches in between the cookies.
Bake for 6 to 10 minutes, until browned around the edges. Cool completely and transfer to an airtight container for storage.
Makes about 4 dozen cookies, depending on size.

White Chocolate Brownies

White Chocolate Brownies

(adapted from Anna Olsen, Sugar, Food Network Canada)
Makes 12 squares
  • 1/3 cup unsalted butter, cut in pieces
  • 8 ounces white chocolate, chopped
  • 2 eggs
  • 1/2 cup sugar
  • 1/2 tablespoon pure vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • Pinch of salt
  • heaping 1/2 cup bitter-sweet chocolate chips
  1. Preheat oven to 350° F.
  2. Butter and line a 9-inch baking pan with butter and parchment.
  3. Place butter in a medium-sized, heat-proof bowl. Place bowl over a pot of barely simmering water, melt butter halfway.   Add 4 ounces of the white chocolate and stir until chocolate has melted. Remove from heat and add in the remaining 4 ounces of chocolate.  Stir until chocolate has melted and mixture is smooth.
  4. Place sugar and eggs in a large bowl.  Using a hand-held electric mixer on high speed beat sugar and eggs until pale and thick, about 3 minutes.  Reduce speed to medium and add vanilla and chocolate mixture, beat just to combine.
  5. In a separate bowl, using a fine-mesh sieve, sift flour, baking powder and salt.  Add to egg mixture and beat until smooth.
  6. Add chocolate chips, using a spatula, stir to just combine (do not over stir).
  7. Pour batter into prepared pan and bake for 25 to 30 minutes or until a cake tester inserted into centre comes out clean.  Place on wire rack to cool completely. Remove from pan and cut into squares.
