Bestest Cherry Cobbler

set oven at 350 F.

1 stick unsalted butter, melted in a 9x13 oblong pan

Homemade Cherry Pie Filling

 4 c. fresh picked cherries / store-bought cherries, pitted
2/3 c. white sugar
2 Tbsp lemon juice
1 tsp vanilla
1/4 tsp. almond extract
2 Tbsp corn starch

Cake Batter

1 1/3 c. flour
2 tsp baking powder
2 eggs
3/4 c. brown sugar
1/2 tsp salt
1/3 c. sour cream
1/2 tsp cinnamon
milk

Whipped Cream

3/4 c. whipping cream
1/4 tsp almond extract
dash of cinnamon
1/2 tsp sugar

Place the pan in the oven with the butter and let it melt.  While that's melting, make the cherry sauce.  Cut the cherries in half, place them in a medium saucepot with the sugar, lemon, almond, vanilla.  Cook over medium-low hear.  Once its bubbling, stir in the corn starch.  Remove from heat and let cool

While its cooling make the batter.  Place the flour, powder, salt, brown sugar, eggs, sour cream in a mixing bowl and begin blending.  Add milk to thin it out to a thick, pourable consistency.  Should require 1/2 c to 3/4 c. of milk

Once the batter's blended up and the butter's melted, take the hot pan out of the oven.  Pour the batter into the pan, trying to displace the melted butter evenly.  Then pour the cherry filling (which should be loose, pourable and somewhat thick like sauce) over the top.  

Bake at 350 F for 30-35 min, or until the cake in the middle is firm.

Kirsch PfannKuchen - German Cherry Pancake

Ingredients:
1 tsp butter, melted in a 9 inch, oven-safe frying pan

batter:
1 tbsp butter, melted
1/2 c. milk
3 large eggs
1/2 c. flour1 tsp. vanilla
 
2 c. pitted sweet or sour cherries, fresh, or frozen, halved
1 tbsp sugar
pinch of salt
1/4 tsp cinnamon
1/4 c. sliced almonds

Serve with:
powdered sugar 
Sour Cream

Preheat oven too 450 F.
Put the 1 tsp of butter in the frying pan and melt it on stove. Remove from heat once melted and make sure the surface is covered with the melted butter.

Whisk the melted 1 tbsp of butter with the eggs, milk, and vanilla.  Add the flour, sugar, salt and cinnamon to combine. 

Add the cherries to the frying pan, evenly distributing across the surface.  Pour the batter over the cherries, trying to cover them all evenly.  Sprinkle the almonds over the top.

Place in oven for 15-20 minutes.

let cool for 5 minutes before cutting into wedges.  Serve sprinkled with powdered sugar and a spoonful of sour cream.

Cherry, Feta, and Pistachio Salad

Ingredients

4 cups arugula
2 cups baby spinach
1/3 cup thinly vertically sliced red onion
1 1/2 tablespoons fresh lemon juice
1/2 teaspoon Dijon mustard
1/2 teaspoon honey
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 small garlic clove, minced
2 tablespoons extra-virgin olive oil
1 cup pitted halved fresh Rainier cherries
1 ounce crumbled goat cheese (about 1/4 cup)
1/4 cup salted dry-roasted pistachios

Preparation

1. Combine arugula, spinach, and onion in a large bowl.
2. Combine juice, mustard, honey, salt, black pepper, and garlic in a medium bowl, stirring with a whisk. Gradually drizzle in olive oil, stirring constantly with a whisk. Drizzle dressing over salad, and toss gently to coat. Arrange 1 1/2 cups salad on each of 4 salad plates. Top each serving with 1/4 cup cherries, 1 tablespoon cheese, and 1 tablespoon nuts.
